Raspberry Pretzel-less Salad
Raspberry Pretzel-less Salad
This dessert is easy to make, lower in carbs and delicious! You can make this with any combination of jello & berries you’d like. You can leave the berries out if you don’t want them or wish to cut the carbs even more. I decided to make mine with raspberries since I have so many out in my garden.
RECIPE - Makes 12 pieces
INGREDIENTS:
1/2 cup chopped walnuts
1/2 cup chopped pecans
1/4 cup almond flour
2 Tbsp golden monkfruit sweetener
3 Tbsp melted butter
4 oz softened cream cheese
3/4 cup heavy cream
1/4 cup powdered monkfruit sweetener
1 tsp vanilla extract
1 tsp lemon juice
0.6oz box of Simply Delish Raspberry Jel
1/3 cup cold water
1 & 1/3 cup boiling water
1/2 cup fresh raspberries
DIRECTIONS:
1. Preheat oven to 350 degrees Fahrenheit.
2. In a food processor, pulse the nuts, almond flour and golden monkfruit sweetener a few times.
3. Pour the melted butter in a greased 8x8” baking dish. *If using silicone, there is no need to grease it.
4. Stir the chopped nut mixture into the butter and stir well to combine.
5. Press the nut mixture into the dish to completely cover the bottom and then bake for 10 minutes.
6. Remove from oven and place in the freezer to cool quickly.
7. While it’s cooling, prepare the cream cheese layer by mixing the softened cream cheese, heavy cream, powdered monkfruit sweetener and vanilla extract.
8. Whisk until smooth and thick and then stir in the lemon juice.
9. Spread the cream cheese mixture all over the cooled crust making sure it touches all sides of the dish.
10. Place in the fridge for a couple of hours to set.
11. Once it has set, prepare the jello topping by mixing the jel with 1/3 cup of cold water in a bowl until dissolved.
12. Stir in 1 & 1/3 cups of boiling water and then add in the raspberries. Mash if desired.
13. Let it cool for just a few minutes and then slowly pour it over the cream cheese layer.
14. Place it in the fridge to cool and set.
NUTRITION: 1 piece | 3g net carbs | 7.2g total carbs | 1.7g fiber | 201 calories | 7g protein | 20g fat | 0.7g sugar | 2.5g sugar alcohol
*I used a 0.6oz box of sugar free jello called Simply Delish Raspberry jel as it does not contain aspartame. You can buy it in most grocery stores and it’s even sold on Amazon. It’s not crazy expensive either…mine was $2.69 at Giant Eagle.

I noticed there is 2 cups of nuts. Would it work to substitute 1/2 cup chocolate chips for 1/2 cup of the nuts or do you think it would be too gooey? I appreciate your advice. Thanks for the recipe!
You have failed to season this ... Nothing but salty soy sauce...high sodium Anybody cook this please seasoning other then soy sauce.. everything is not to taste the same .. break the flavors up. I can already taste this lol

Philly cheesesteaks on the viral cottage cheese flatbread! This was the first thing I cooked on the new Camp Chef Gridiron griddle and it was so delicious! I made mine on a cottage cheese flatbread. See recipe below. 👇🏼 I cooked chipped steaks seasoned with salt, pepper, garlic powder and Worcestershire sauce from Duma Meats. I also cooked sliced onions and mushrooms in some butter. 😋 COTTAGE CHEESE FLATBREAD RECIPE: 1/2 cup @good_culture low fat cottage cheese 1 large egg 1 Tbsp grated Parmesan cheese 1/4 tsp garlic powder DIRECTIONS: 1. Preheat oven to 350 degrees Fahrenheit. 2. Blend the ingredients until smooth (about 30 seconds.) 3. Spread the mixture out into a rectangular shape on a parchment lined baking sheet. *Mine measured 7”x10”. 4. Bake for 30 minutes or until slightly browned. 5. Let the flatbread cool for a few minutes before removing from the parchment paper. *Nutrition is for the flatbread only. Buffalo Chicken Taquitos These taquitos are a family favorite! They’re quick, easy and delicious. 🙌🏼 I used my homemade ranch dressing in this recipe. It can be found on my page as well as in my cookbook and meal plans. www.Kristysketolifestyle.com/shop RECIPE -Makes 21 taquitos INGREDIENTS: 5 @cutdacarb flatbreads 2 boneless, skinless chicken breast cooked & shredded 1/3 cup softened cream cheese 1/3 cup Kristy’s Homemade Ranch Dressing 1/4 cup Frank’s Red Hot 1 cup freshly shredded Monterey Jack cheese Cooking spray STEPS: 1. In a large bowl, mix together the cream cheese, ranch dressing, red hot and Monterey Jack cheese. 2. Stir in the cooked, shredded chicken. 3. Working with just 1 flatbread at a time, lay it horizontally on a cutting board and cut it into fourths. 4. Spread some of the buffalo chicken mixture onto one king end of each piece of flatbread and roll it up very tightly. 5. Repeat until you have all of the mixture used up. I was able to make 20 taquitos. 6. Spray them all with cooking spray and then place them in your preheated air fryer. 7. Air fry at 350 F for 3 minutes. 8. Flip them over, spray them again and then air fry for another 3 minutes. *You could also pan sear these in a skillet with 1-2 tbsp of avocado oil OR bake them at 375 for 5-7 minutes or until they turn golden brown.
